Since I got snowed in yesterday, (yay for np work!) I cooked and cleaned all day. And played video games, but that’s a post for another day.
Anyway, I made these no bake cookies. Yes they are my favorites. Yes I have the recipe memorized and yes, I can eat an entire batch all by myself. (Although that is highly not recommended.)
Want to make them for yourself? Here’s what you need:
1/2 stick of butter
1/4 cup of milk
1 1/2 tablespoons of cocoa powder
3/4 (ish) cups of sugar
1 1/2 (ish) cups of oats (I’ve always used instant)
3/4 – 1 cup flakes coconut
Dash of vanilla abstract, if you’ve got any.
So, here’s what you do. Melt the butter in a sauce pan, and dump the milk, sugar and cocoa powder in when the butter is liquidy enough to play with. When everything is stirred together and syrupy, let it boil for one minute, and one minute exactly. Also, stir the fuck out it, because otherwise it wants to char or something.
Anyway, when that sucker has been boiling for a minute, you can add in the vanilla extract (if you want). BUT HERE’S THE FUN PART: now you add in the oatmeal and coconut. Stir it all up REALLY quickly, because this gooey concoction needs to be hot to set correctly.
Then scoop out cookie sized dollops of the stuff and plop it all on a baking sheet lined with parchment paper. Then stick it in your freezer for like, 10 minutes, so the cookies become all DELICIOUS AND PERFECT.
Makes about a dozen large sized cookies or 18 kinda smallish ones.
