I got this recipe from a friend, who I think got it from pinterest originally. It’s pretty much just chicken and bell peppers and onions and salsa all thrown into a crockpot to cook for 4-6 hours while praying that it doesn’t burn while you’re at work.
It was pretty tasty. And once again, I’ve substituted greek yogurt for sour cream. Less fat and more protein!
Since I got snowed in yesterday, (yay for np work!) I cooked and cleaned all day. And played video games, but that’s a post for another day.
Anyway, I made these no bake cookies. Yes they are my favorites. Yes I have the recipe memorized and yes, I can eat an entire batch all by myself. (Although that is highly not recommended.)
Want to make them for yourself? Here’s what you need:
1/2 stick of butter
1/4 cup of milk
1 1/2 tablespoons of cocoa powder
3/4 (ish) cups of sugar
1 1/2 (ish) cups of oats (I’ve always used instant)
3/4 – 1 cup flakes coconut
Dash of vanilla abstract, if you’ve got any.
So, here’s what you do. Melt the butter in a sauce pan, and dump the milk, sugar and cocoa powder in when the butter is liquidy enough to play with. When everything is stirred together and syrupy, let it boil for one minute, and one minute exactly. Also, stir the fuck out it, because otherwise it wants to char or something.
Anyway, when that sucker has been boiling for a minute, you can add in the vanilla extract (if you want). BUT HERE’S THE FUN PART: now you add in the oatmeal and coconut. Stir it all up REALLY quickly, because this gooey concoction needs to be hot to set correctly.
Then scoop out cookie sized dollops of the stuff and plop it all on a baking sheet lined with parchment paper. Then stick it in your freezer for like, 10 minutes, so the cookies become all DELICIOUS AND PERFECT.
Makes about a dozen large sized cookies or 18 kinda smallish ones.

Okay, so. I have approximately ZERO ability to meal plan. And considering it’s the start of the new year (well, it’s still January, anyway), I really want to get better at that. Half the time when I want something to eat, I have nothing in my house to cook with, and thus go out to eat at a restaurant. Or fast food. (Oh god, the fast food.)
And not only can I literally not afford to do that anymore (not with this savings budget I’m inflicting upon myself), my waistline can’t afford it either.
Not only that, but my cooking abilities are only that of a college sophomore–I can throw together a salad, or follow a pretty basic recipe (like, say, box mac n’ cheese). Anything more complicated tends to come out burnt and semi-inedible. But I’m learning. And I’d like to learn more.
So this is a blatant call for help. Please send me your recipes, your tips and tricks for meal planning, what you do with leftovers, whatever. Whatever you have as far as kitchen skills go, I want to hear about it. Please. Because I really can’t eat out any more.
